Trapani to Erice cable car was under construction and we made the climb to the city that sits 2.5K feet above the sea level in our little rented VW. Took a few snapshots from the GPS monitor — to complete the feeling, just add a sheer cliff on one side of a two way road the width of one car and Bernard Herrmann in the background. <br>

Sitting on my hands, looking at my Cary Grant, I was thinking who I resembled most at the time: Joan Fontaine, Grace Kelly, or Eva Marie Saint.<br>

JuliaCannolo, Frutta Martorana or marzipan shaped to resemble fruits, and Cassatta Siciliana or ricotta, candied fruit and chocolate, flavoured with vanilla and maraschino liqueur, encased in sponge cake, with limoncello and orange juice at Maria Grammatico Paticceria in Erice. Maria’s story, that of a child from a poor family sent to a monastery and how she grew to become the pastry queen of Sicily, is in the book Bitter Almonds.<br>

Y⃒̸̷̝̜̙ͥͥͥngmar<p>5 years ago, lockdown in Sicily started. </p><p>There were no facemasks, people improvised with what they had, painters masks, scarves, cut up diapers.</p><p>Had an illegal BBQ with our friend who got trapped, hauled out alone in a boatyard that shut down and just gave him the gate key but no access to water. He was going crazy, with only Merkel the boatyard dog for company.</p><p>Meanwhile our boat started leaking. For this delicacy, cow spleen, lung, and trachea are boiled for a long time until soft, then, right before serving, fried in pork lard, placed on a bun, and sprinkled with salt and lemon juice. Frying in lard gives the meat the most incredible softness and that final touch of salt and lemon juice just bursts the flavors in the mouth. Nothing so tender and umami at the same time — and so unmistakably Italian — in my recent memory. The sandwich is filling but, honestly, you’d want these flavors and textures to linger.<br>
