@Rasta Maitake (hen of the woods) is probably the easiest to ID, but in NS they grow almost exclusively on old oak. And NS doesn't have much of that, and the hen is actively eating the tree.

We once found a 35lb maitake!

edulis/Porcini are the best dried, maybe better than fresh, almost. We have several jars from years past, and they smell slightly of fresh baked cookies when dried.
Scent gets stronger with age, no change to flavour however.
