This guy's channel is a treasure trove of really useful and interesting information. Reviews, tutorials, and signposts galore for all manner of quirky, wild and interesting apps for making, synthesizing, and sequencing music on IOS.
I'm particularly enamored at the moment with TC-11, a rather remarkable multi-touch "instrument" he pointed out:

I really wish all this stuff were available on Android. I'm no fan of walled gardens, but the sad truth is that publishers don't want to invest the same way in Android apps and there's barely a market for any of this in IOS either as most of these apps haven't been updated in years.
He also co-authored a #vcvrack like modular synthesizer for IOS called Solderbox:
